Earlier this week Vince posted the Mille-Crepe Tiramisu Birthday Cake on my Facebook and told me to make it. I looked at it and decided to make it because i love cake, crepes, and tiramisu so i figured why not. Something different...let's do it.
When i looked at the ingredients needed and what i had i realized i didn't have cognac or marsala wine. So decided to mix it up and use some matcha powder instead making a green tea mille-crepe cake.
It was my first time making it and it was far from perfect, but gave me the opportunity to work on some of my technical skills. For example, i had to make so many crepes i got really good at flipping them with my wrist and no spatula! i was impressed with myself! =P (especially after the first few ended up landing land half way out of the pan.....)

Overall it was good, but the cake was semi dry. The crepes were a little "firmer" then i'd like, especially for a crepe--i think for the use of making cakes it was the right thickness, but because the tiramisu mix i made was more of a frosting texture rather than a filling it didn't soften like i would like. Next time i will try a vanilla bean custard or something as it makes the crepes softer as it sits. And maybe add fruit between the layers. Or even a gelée over the top layer. What i like about this cake is there are so many different things to try with it from a a filling and flavors perspective. I will definitely have to do it again.
