The BBQ was a potluck so of course i brought some dessert. I decided to try something new and made Raspberry Cheesecake Minis. Let me know what you think if you try it.
For Crust:
1 C Graham crackers
2 Tbs Sugar
2 Tbs Brown Sugar
2 Tbs Butter (melted)
For Filling:
3-4 Packages of Cream Cheese (8 oz packages)
1 C Sugar
3/4 C (8 oz) Sour Cream -- I didn't have any so i subbed Vanilla Greek Yogurt instead
2 Tbs All Purpose Flour
1/2 tsp Vanilla extract (optional)
4 Eggs, lightly beaten
For Topping:
12 oz Fresh Raspberries
1/2 - 3/4 C Sugar
1 Tbs Lemon juice
2 tsp Corn Starch
1 Tbs Cold Water
